Thirty-six aspiring chefs from l'École Hôtelière Sir Gaëtan Duval are currently participating in an exceptional training programme inspired by the culinary traditions and techniques of the legendary Paul Bocuse. Supported by Absa Mauritius, this programme was developed by the Bocuse d’Or Academy Mauritius in collaboration with l'École Hôtelière.

Over the course of eight weeks, this programme will combine theory and practice, blending classical culinary techniques with modern innovations. Guided by experienced chefs such as Nizam Peeroo, Kritesh Halkory, Emmanuel Fortuno, Patrick Travedy, Harrish Mungar, and Kevin Jumangalsing, participants will have the opportunity to refine their skills and enhance their culinary creativity.
Chef Emmanuel Fortuno, silver medalist at the 2024 culinary competition Bocuse d’Or Africa, expressed his excitement about sharing his expertise with the students: “I’m looking forward to sharing my knowledge and showing the students the importance of using quality ingredients to create refined dishes. It’s a true honor to pass on this passion and highlight the richness of our profession.”
For these aspiring young chefs, the programme offers an opportunity to learn the core principles of cooking that made Paul Bocuse a legend in the culinary world. Kunal Jankee is one of those excited to learn. “I can’t wait to discover new techniques, experiment with original recipes, and most importantly, learn from renowned professionals. This is a fantastic opportunity for those of us who dream of a career in this industry.” Haseenah Boodhoo also expressed her excitement, stating, "This training will allow me to enhance my culinary skills and gain new insights, setting a solid foundation for a successful career in the culinary arts."
